Grilled Chicken Sandwich & Roasted Broccoli

“We never have to eat out again!” This was Jared’s reaction to this grilled chicken sandwich, lol! I was so shocked that he was so impressed with a simple sandwich, but then again, his favorite meal is anything sandwich/ bread.


IMG_1517Healthy Grilled Chicken & Avocado Sandwich

Nutrition Info: (1 sandwich) Calories: 330, Carbs: 28, Sugars: 2, Protein: 27, Fiber: 7, Fat: 17 (good fat!)


(Makes 2 sandwiches)

  • 2 Chicken breast cutlets (3 oz each)
  • Olive oil (1 tbls.)
  • Lemon juice
  • Garlic powder
  • Onion powder
  • Salt and pepper
  • Avocado (1/2) sliced
  • Purple onion
  • Mustard or other sauce
  • Lettuce
  • Whole wheat hamburger buns (I use Natures Own 130 cal)


  • Heat grill pan on stove over medium high or use outdoor grill. Heat 1 tablespoon olive oil on grill pan.
  • Before placing chicken on pan, squirt lemon juice on both sides of the chicken breast cutlet, then add spices (however much you like of each).
  • Place on warmed grill pan or grill. Cook each side 5- 10 minutes or until cooked through.
  • Assemble sandwich with remaining ingredients.
Roasted broccoli


Nutrition Info: (per 2 cups) Calories: 187, Carbs: 12, Sugar: 0, Fat: 14, Fiber: 6, Protein: 6


  • 1 crown of fresh broccoli
  • Juice from 1/2 lemon
  • 1 1/2 tablespoons olive oil
  • 3 cloves garlic minced or chopped
  • Salt and pepper
  • Parmesan cheese


  • Pre-heat oven to 425
  • Cut florets of broccoli and place in a large bowl
  • Add olive oil, lemon juice, garlic, salt and pepper and toss to combine and coat.
  • Place coated broccoli on foil lined cookie sheet. Cook for 16-20 minutes or until broccoli is lightly browned and crispy.
  • Add 1/8 cup Parmesan cheese after pulling broccoli out of oven.
