Protein Southern Banana Pudding Parfait

SUMMER is just a few days away! What says summer in the south more than BBQ’s and Banana Pudding from scratch! Well, now you can enjoy the flavors of banana pudding as a protein treat! I created the perfect snack to fill that craving without killing your healthy lifestyle! HOWEVER… if you really need a good “Grandma’s” banana pudding recipe, click HERE.

Protein Banana Pudding Parfait
Ingredients:

“Vanilla Wafer” layer (protein pancakes)

  • 1 scoop vanilla protein powder
  • 1/2 banana mashed
  • 1/4 cup egg whites
  • dash of vanilla extract
  • 1/2 tsp cinnamon
  • 1-2 TBS almond milk for thinning batter

“Pudding” layer:

  • 1/2 cup Plain non-fat greek yogurt
  • 2 tsp peanut butter
  • 1 tsp vanilla extract
  • cinnamon to taste
  • 1/4 mashed banana + 1/4 banana or more sliced (set aside)

Coconut whipped cream:

  • 1 can full fat coconut milk
  • vanilla extract
  • stevia or truvia
Instructions:

Whisk “vanilla wafer” layer ingredients together. Heat a skillet over medium to medium low heat. Spray pan with non-stick baking spray. Pour batter onto skillet as you would a pancake (this is actually a recipe for protein pancakes), but make them size of “silver dollar pancakes” or vanilla wafers. Flip when top begins to bubble and set aside when done.

Mix “pudding” layer together in a bowl. Add mashed banana to the yogurt. Save the sliced banana for now. To make coconut whipped cream, refrigerate 1 can of full fat coconut milk overnight or several hours. Open can and skim the watery part out. A creamy mixture should be left. Add 1 package of stevia or truvia + vanilla extract. You can whip the cream with a mixer if you like or use it as is.

Assembly:

Place 2 “vanilla wafers” at the bottom of a cup or mason jar. Add the pudding layer on top. Next add 2-3 slices of banana. Repeat layers. Top with coconut whipped cream. This recipe may make 2-3 servings. **Note: You can also make this as regular sized protein pancakes and use the pudding and bananas as a topping.
